As\u00ed lo escribe Ada Boni\u00a0en su libro <i>Il talismano della felicit\u00e0 <\/i>(Colombo), que vendr\u00eda a ser\u00a0la Enciclopedia entre las enciclopedias de la gastronom\u00eda italiana. A base de huevos, parmesano, mantequilla, panceta, cebolla, vino blanco seco y sal, esta elaboraci\u00f3n\u00a0resulta\u00a0vital\u00a0para poder preparar determinadas platos. De hecho, la autora sugiere que ante una receta <i>alla carbonara<\/i> se debe empezar por \u00e9sta para que el plato luego sea un \u00e9xito.<\/p>\n<p>Ada Boni\u00a0sugiere hacerla sin nata, si\u00a0bien cada maestrillo tiene su librillo y en Italia se agregan, se prescinden o se intercambian algunos ingredientes de la carbonara\u00a0seg\u00fan la zona. En todo caso, resulta ideal en combinaci\u00f3n con spaghetti.<\/p>\n<p>Originaria de Roma, la receta primera del \u00abcondimento\u00bb carbonara no incluye ni nata ni tocino, algo impensable para quien piensa autom\u00e1ticamente en estos dos ingredientes\u00a0cuando se plantea preparar una salsa carbonara. En cada cocina &#8211; y por extensi\u00f3n, en cada regi\u00f3n de Italia -, se elabora\u00a0a la manera de cada cual, tomando en cuenta unos ingredientes sobre otros por una simple cuesti\u00f3n de gustos. Ah\u00ed radica parte del encanto de la gastronom\u00eda.<\/p>\n<p>Hay quien incluye bacon, hay quien\u00a0incluye ajo, hay quien prescinde del vino y hay quien, junto a la mantequilla, no descuida ni la nata ni el aceite de oliva con el que se\u00a0saltea\u00a0la panceta. Unos troceada, otros en tiras.<\/p>\n<p>La carbonara est\u00e1 considerada una receta b\u00e1sica\u00a0de cuyos or\u00edgenes se han hecho muchas lecturas.
