Ahora, sin embargo, nos toca\u00a0ponernos en modo vegetariano para demostrarte que una pasta puede ser\u00a0tambi\u00e9n una excelente alternativa m\u00e1s all\u00e1 de bolo\u00f1esas y carbonaras. \u00bfLo\u00a0descubrimos?<\/p>\n<h5><span style=\"color: #ff0000;\">Con berenjena y cacahuete<\/span><\/h5>\n<p>Necesitaremos 1 berenjena grande, 4 tomates pelados, 1 cebolla, un pu\u00f1ado\u00a0peque\u00f1o de cacahuetes, 2 ajos picados, sal, aceite de oliva virgen extra y\u00a0albahaca fresca.<\/p>\n<p>Fre\u00edmos las berenjenas en dados y reservamos. Sofre\u00edmos la\u00a0cebolla e incorporamos el ajo, los tomates, la albahaca picada y la sal, hasta\u00a0tener la salsa lista. Molemos los cacahuetes y los a\u00f1adimos a la misma.\u00a0Incorporamos la pasta cocida y bien escurrida.<\/p>\n<h5><span style=\"color: #ff0000;\">Con alcachofas y nueces<\/span><\/h5>\n<p>Los ingredientes esta vez son 5 alcachofas frescas, 2 cebolletas, 3 zanahorias,\u00a070 g de nueces, aceite de oliva virgen extra, pimienta, sal y el zumo de medio\u00a0lim\u00f3n.<\/p>\n<p>Lavamos y cortamos las alcachofas, y las sumergimos en agua con el\u00a0zumo de lim\u00f3n. Se lava y trocea el resto de la verdura, se saltea y se reserva.\u00a0Se escurren bien las alcachofas y saltean tambi\u00e9n en aceite de oliva virgen\u00a0extra. Se incorpora de nuevo la verdura reservada y se salpimenta. Una vez\u00a0mezclado con la pasta, incorporamos las nueces en el momento de servir.<\/p>\n<h5><span style=\"color: #ff0000;\">De calabaza y tofu<\/span><\/h5>\n<p>Esta receta requiere 200 g de calabaza, 200 g de tofu, 1 puerro, 2 tomates, 5\u00a0avellanas, aceite de oliva virgen extra, sal y cilantro.<\/p>\n<p>Rehogamos el puerro\u00a0cortado muy fino. Incorporamos la calabaza en daditos y, una vez dorada, el\u00a0tofu, tambi\u00e9n cortado en peque\u00f1os dados. Tendremos lista la pasta cocida y la\u00a0salsa, que se prepara en batidora con los tomates pelados, el cilantro, las\u00a0avellanas y un poco de aceite de oliva virgen extra. Se incorpora la pasta a la\u00a0calabaza y el tofu.
