Pasta with pumpkin and cottage cheese

  • 400 g of your favourite pasta (spaghetti, penne…)
  • 500 g peeled pumpkin chunks
  • 1 onion
  • 300 g cottage cheese
  • Extra-virgin olive oil
  • Fresh sage
  • Handful of raisins

  1. Step 1

    While you’re boiling the pasta in plenty of salted water, cut the pumpkin into small pieces and peel and chop up the onion.

    Gently fry the pumpkin and onion in some extra-virgin olive oil and add some sage leaves and raisins you’ve soaked in water for about an hour beforehand.

    When the onion is translucent and the pumpkin is soft, take off the heat and remove the sage leaves.

    Mix together with the pasta, strain and add the crumbled cottage cheese.
