Here\u2019s how: design a red, white and green colour scheme (keep it\u00a0classy rather than tacky), put together a Playa Para\u00edso playlist and draw up a simple\u00a0but impressive menu (don\u2019t forget tacos and guacamole). <em>\u00d3rale!<\/em><\/p>\n<p>The idea is to organise a taquiza, a buffet with ingredients for everyone to make their\u00a0own taco. Put out corn and flour tortillas (make sure you keep them warm, or don\u2019t put\u00a0them out all at once so they won\u2019t get cold), along with different fillings. This should\u00a0create an enticing atmosphere around the table that will spark conversation and\u00a0encourage guests to interact. Some cold beers and margaritas should do the rest.<\/p>\n<h5><span style=\"color: #ff0000;\">From guisado con mole to cochinita pibil<\/span><\/h5>\n<p>No Mexican dinner party would be complete without these two classics: mole, from\u00a0Puebla City, as a paste or powdered, mixed with pulled chicken; and cochinita pibil, a\u00a0typical recipe from the Yucat\u00e1n Peninsula, made from pork seasoned with annatto\u00a0seed. This is how you make cochinita pibil: first marinate the pork loin for between at\u00a0least one and preferably up to twelve hours in the fridge, using a marinade made from\u00a0the juice of one orange and one lime, a pinch of cumin, oregano, extra-virgin olive oil,\u00a0two spoonfuls of vinegar and 80\u00a0g of annatto paste (for 1\u00a0kg of pork). Bake in the\u00a0marinade en papillote for about 60 minutes at 200\u00a0\u00baC. Once ready, cut into slices and\u00a0pull apart with your fingers. Mix with any remaining marinade. Accompany with a sauce\u00a0made out of dried chilli\u2014rehydrated, chopped and deseeded\u2014finely chopped red\u00a0onion, the juice of one lemon and a pinch of salt. Serve the sauce separately so that\u00a0everyone can add their own to taste.<\/p>\n<h5><span style=\"color: #ff0000;\">Rice, beans, and totopos and guacamole!<\/span><\/h5>\n<p>In addition to meat, Mexican cuisine also includes other tasty dishes featuring rice,\u00a0black beans, crunchy totopos (nachos) and, of course, a good guacamole. For every\u00a0four avocados, you\u2019ll need one spring onion, two tomatoes, one lemon, salt and half a\u00a0spoonful of coriander. Finely chop all the ingredients and then add the avocados. Mix\u00a0together and you\u2019re good to go!
