You\u2019ll need 75\u00a0ml of milk, 75\u00a0ml whipping cream, half a stick of vanilla, 2 egg yolks,\u00a030\u00a0g of sugar, 120\u00a0g of chocolate, orange zest, extra-virgin olive oil and sea salt flakes.\u00a0Warm the milk, cream, sugar and vanilla in a pan. When it comes to the boil, take off\u00a0the heat and add the egg yolks, stirring all the while. Add the chocolate and mix in until\u00a0it melts. Use the blender to whip it into a mousse, pour into a bowl and leave it in the\u00a0fridge overnight.
