Don\u2019t worry, you just need to do some\u00a0extra shopping and give your plans a bit of a tweak.<\/p>\n<p>There are lots of commercially\u00a0available vegan products today to make it easier when you\u2019ve got ethically committed\u00a0guests coming to brunch, from vegan cheese to vegetarian cold cuts. Here are some\u00a0ideas:<\/p>\n<h5><span style=\"color: #ff0000;\">Vegan cheese, apple and golden syrup bagels<\/span><\/h5>\n<p>To make homemade bagels you\u2019ll need 350\u00a0g of wholegrain flour, a packet of baking\u00a0powder, 250\u00a0ml of water, 3 spoonfuls of golden syrup, 1 teaspoonful of salt and poppy\u00a0seeds. Mix the flour, salt and baking powder in a large bowl. Add warm water and\u00a0continue mixing until you get a smooth mixture. Cover with a tea towel and set aside for\u00a0an hour. Roll out the dough on a floured surface and knead well. Divide up and shape\u00a0into bagels. Bring some water to the boil and preheat the oven to 180\u00a0\u00baC while you\u00a0finish off shaping the bagels. Dunk the bagels into a bowl of water to check they float,\u00a0remove and roll them in poppy seeds. Put them into the oven to bake; they\u2019ll take about\u00a030 minutes.<\/p>\n<p>One idea is to fill them with vegan cheese, slices of organic apple and a little golden\u00a0syrup to offset the sharp apple and the savoury cheese. Alternatively, you could use\u00a0salad leaves and vegetarian cold cuts.<\/p>\n<h5><span style=\"color: #ff0000;\">Vegan \u201ceggs\u201d Benedict<\/span><\/h5>\n<p>Brunch isn\u2019t brunch without eggs Benedict, so here\u2019s a delicious vegan version. You\u00a0start with vegan bread\u2014without any eggs, milk or butter\u2014and vegan bacon. We\u2019ll\u00a0replace the scrambled eggs with tofu: break a piece of well-strained tofu into small\u00a0pieces with the help of a fork and fry with some finely chopped onion, turmeric and\u00a0pepper. Cook until all the liquid has gone. Use a glass to cut out circles of bread and\u00a0arrange the \u201ceggs\u201d and bacon on top.
