Today, though, we\u2019re staying in\u00a0the kitchen, so get your apron on and let\u2019s get going!<\/p>\n<h5><strong><span style=\"color: #ff0000;\">Au naturel: dressings and sauces<\/span><\/strong><\/h5>\n<p>Extra-virgin olive oil is at its best in its natural state and can tingle all our\u00a0senses. It\u2019s equally delicious in a dressing or a <a href=\"http:\/\/worldwide.borges.es\/blogpost\/chocolate-and-olive-oil\/\" target=\"_blank\" rel=\"noopener\"><span style=\"text-decoration: underline;\">chocolate mousse<\/span><\/a>. Au naturel\u00a0it\u2019s also great for <a href=\"http:\/\/worldwide.borges.es\/blogpost\/winning-barbecue-recipes\/\" target=\"_blank\" rel=\"noopener\"><span style=\"text-decoration: underline;\">marinades<\/span><\/a> and meat rubs, such as the traditional (and\u00a0irresistible) garlic and paprika rub. These techniques, originally created to help\u00a0food last longer, tenderise meat or mask strong smells, are now a regular\u00a0feature in hundreds of recipes. If you haven\u2019t already done so, try some of them\u00a0out and you\u2019ll see how simple it is to produce mouthwatering results.<\/p>\n<p>And we shouldn\u2019t forget that extra-virgin olive oil has been used for centuries to\u00a0preserve fresh food such as meat, fish, cheese and vegetables, by protecting\u00a0products from outside agents. It is perfect for making semi-preserves of\u00a0vegetables, cheese in aromatic oil or sundried tomatoes and is a great way of\u00a0always having <a href=\"http:\/\/worldwide.borges.es\/blogpost\/fresh-herbs-ready\/\" target=\"_blank\" rel=\"noopener\"><span style=\"text-decoration: underline;\">fresh herbs to hand<\/span><\/a>.<\/p>\n<h5><span style=\"color: #ff0000;\"><strong>When the temperature rises<\/strong><\/span><\/h5>\n<p>Although extra-virgin olive oil is at its best in its natural state, it\u2019s still highly\u00a0versatile when we turn up the heat. Why? Because it can withstand high\u00a0temperatures without losing any of its properties or decomposing, which makes\u00a0it a great ally when it comes to frying, for example. You can also use it to make\u00a0confits (long cooking over a low heat), sweating (cooking over a low heat) and\u00a0saut\u00e9ing (tossed over a higher heat). As you can see, you can use extra-virgin\u00a0olive oil in any cooking technique that calls for oil or fat.<\/p>\n<p>And if we open the oven door, we can start adding more uses to the list. It\u2019s a\u00a0healthy substitute for butter when it comes to greasing oven dishes and it\u2019s\u00a0perfect for accompanying roasted and baked foods. A platter of oven-roasted\u00a0vegetables with salt, pepper and a good drizzling of extra-virgin olive oil is\u00a0simply irresistible!<\/p>\n<h5><strong><span style=\"color: #ff0000;\">Emulsions and sweet dishes<\/span><\/strong><\/h5>\n<p>Extra-virgin olive oil is great for making foams and emulsions, which add body\u00a0and texture to the accompanying ingredients. We can see this in vinaigrettes,\u00a0pil-pil sauce (lovely with cod), mayonnaise, aioli and creamy salmorejo, but it\u00a0works just as well with sweet foams. Since we know it\u2019s a great substitute for\u00a0butter or margarine, why not try it out when you\u2019re making a sponge, biscuits or\u00a0desserts such as rice pudding or cr\u00e8me caramel?
