But we don\u2019t know much about the process that olives go through from tree to dining table to bring us that unmistakable taste that lies at the heart of the Mediterranean diet.<\/p>\n<p><span style=\"color: #ff0000;\"><strong>HOW ARE THEY HARVESTED?<\/strong><\/span><\/p>\n<p><span style=\"color: #ff0000;\"><strong>1.<\/strong> <\/span>Olives are harvested in November and December, although the exact date varies depending on local weather conditions.<\/p>\n<p><strong><span style=\"color: #ff0000;\">2.<\/span> <\/strong>Extra-virgin olive oil is made from pristine olives with no blemishes.<\/p>\n<p><strong><span style=\"color: #ff0000;\">3.<\/span> <\/strong>Branches and other unnecessary bits are removed and the olives are washed.<\/p>\n<p><strong><span style=\"color: #ff0000;\">4.<\/span> <\/strong>The first pressing simply presses the olive and extracts the oil.
