This cold pasta salad is not only irresistibly delicious and nutritious, but it\u2019s also a quick, easy and fun dish to make with kids. First of all you need to cook some good-quality penne following the instructions on the packet (put the kids in charge of keeping their eye on the timer).<\/p>\n

Next, cut some chicken breast into cubes and cook in a frying pan with a little extra-virgin olive oil (don\u2019t overdo it!). Add some grated carrot\u2014don\u2019t worry if the kids eat as much raw carrot as goes into the salad, that\u2019s the whole idea!\u2014and a little feta cheese (a small amount will do as it has a strong flavor). Now a handful of black olives and you\u2019re good to go!<\/p>\n
