Cook the potatoes in a pot with water and salt. When the potatoes are cooked, drain them and let them warm up. Then peel them and cut them into medium-sized irregularly shaped pieces and place them in a large bowl.
- 1 kilo of white potatoes, medium size
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- 2 tomatoes
- 1 glass of Borges extra virgin olive oil
- 4 tablespoons of Borges vinegar of Modena
- 1 can of pitted green or black olives
- Salt to taste
Step by step
In a bowl, chop the onion and parsley, and add the oil and vinegar. If we want, we can add a pinch of salt to the mixture. Stir everything well and cover the potatoes.
We cut the tomatoes and chop the peppers -green and red-, we also add the olives (and the chopped almonds) and we add everything to the bowl. With this, our potato and vegetable salad is ready.
You can complete the recipe with other ingredients such as tuna, hard-boiled eggs or diced ham.
