Spaghetti with Gorgonzola and Olives

Ingredients

  • 2 large ripe avocados
  • 120 g strawberries
  • 1 very ripe mango
  • 60 raw Borges almonds
  • 100 g feta cheese
  • For the vinaigrette
  • 80 g Borges extra-virgin olive oil
  • 30 g lime juice
  • 1 tsp honey
  • A pinch of ginger (optional)

    Slice the avocados and arrange on a plate. Add the thinly sliced strawberries, mango, almonds (whole or chopped) and feta cheese cut into small cubes.

    To make the vinaigrette, mix together the extra-virgin olive oil, lime juice, honey and ginger. Drizzle over the salad and add salt and pepper to taste.
