Lentil Salad with Walnuts and Honey Mustard Dressing

Ingredients
- 250 g cooked lentils
- 100 g cherry tomatoes
- 100 g cucumber, diced
- 1 red bell pepper, diced
- 1 red onion, minced
- 30 g arugula
- 50 g chopped walnuts
- 80 g crumbled feta cheese
For the dressing
- 15 ml Borges Classic Olive Oil
- 10 ml apple cider vinegar or balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper

Step 1
Combine the cooked lentils, cherry tomatoes, cucumber, red pepper, red onion and arugula in a large bowl.

In a small bowl, mix the olive oil, vinegar, Dijon mustard, honey, salt and pepper.

Pour the dressing over the salad and toss gently to blend all the flavors. Add the walnuts and feta cheese.
