Vietnamese Spring Rolls with Green Olives and Sesame Sauce

Ingredients
- 8 rice paper wrappers
- 1 carrot
- 1 cucumber
- 1 avocado
- A handful of fresh mint leaves
- A handful of fresh cilantro leaves
- 100 g Borges green sliced olives
- Cooked rice noodles (optional)
- Toasted sesame seeds for a garnish
For the sauce
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil or Borges extra virgin olive oil
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1 teaspoon of sesame seeds
Step by step

Step 1
Soak the rice paper in warm water for a few seconds. Once they have softened, lay them on a damp cloth.

In the center of each wrapper, place some carrot and cucumber, cut into strips, avocado cut into small cubes, a few leaves of mint and cilantro, some green sliced olives, and, for a little more body, a handful of cooked rice noodles.

Carefully roll each wrapper like a burrito, folding the sides in first and then rolling forward to seal.

Mix the ingredients for the sauce in a bowl.

Serve the rolls sliced in half, sprinkled with toasted sesame seeds, with the sauce on the side.
