Easy Breakfast Burrito

A quick and easy dish to prepare.

Ingredients

  • 2 large flour tortillas
  • 2 eggs
  • 50 g meat of your choice
  • 4 to 5 Borges sliced black olives
  • 50 g grated cheese (cheddar or mozzarella)
  • 1 tablespoon Borges extra virgin olive oil
  • Salt and pepper

Step by step

  1. Step 1

    Heat the extra virgin olive oil in a pan over medium heat. Beat the eggs with salt and pepper, pour them into the pan, and cook until they are lightly scrambled.

  2. Step 2

    Add the diced meat and the chopped olives. Mix all the ingredients and season with salt and pepper to taste.

  3. Step 3

    In another pan, lightly heat the tortillas to soften them.

  4. Step 4

    Add some of the egg, the meat and olive mixture to each tortilla. Sprinkle with grated cheese.

  5. Step 5

    Roll the tortillas to make the burritos, folding the ends so the filling doesn’t spill out.

  6. Step 6

    Optionally, brown the folded burritos in a pan with a little extra virgin olive oil to crisp them up.
