How to caramelize vegetables with Modena balsamic vinegar

11 December 2018

Let’s hear it for vegetables!

One of the latest trends to sweep the world has been light, healthy, locally produced dishes made with fresh, seasonal produce. There are a thousand and one ways to give your vegetables an original tweak to create fun, exciting, alluring dishes. Have you tried caramelizing them with balsamic vinegar? A quick drizzle is quite enough to revolutionise those vegetables at the back of your fridge and turn them into a sensational meal or the perfect side dish.

How to do it?

Simply take your favourite vegetables (courgettes, onions, peppers, aubergines, leeks, carrots…) and gently fry them in a frying pan in extra-virgin olive oil for a couple of minutes until soft. Next, add a dash of balsamic vinegar, a spoonful of sugar and a dash of water, turn down the heat and cook for 20 to 30 minutes, until the vegetables are completely caramelized. Then, let your imagination run wild… How about using them as a burger topping, served with pulses or as a side for fish? Go on, try for yourself!
