Turn your vinegar into chocolate balsamic sauce!

We’re already familiar with the standard uses of balsamic vinegar and we’ve even pushed the boundaries beyond dressings, but you might not know that you can also use vinegars to make original sauces such as chocolate balsamic sauce.

All you need is 100 ml Modena balsamic vinegar, a spoonful of honey and 25 g dark chocolate (70%). Heat the vinegar in a saucepan over a medium heat and add the honey. When it begins to boil, reduce the heat and still until it reduces. Chop the chocolate into small pieces and add to the saucepan. Stir regularly until you get a creamy mixture. Take off the heat and leave to cool. You can use your new chocolate balsamic sauce to accompany fruit, ice cream, meat stews and cured cheese.
