Cooking time for pasta bakes

If you’re planning to give your pasta dish an au gratin finish in the oven, it’s best to stop boiling the pasta as soon as it’s al dente (firm but not hard). Don’t worry if you usually like your pasta a bit softer: it will carry on cooking in the oven. If you don’t remove it from the boiling water before time, though, it will end up overdone.
