Basically, rice can be divided into three major groups: short-grain rice (very common in Eastern cooking: it’s what’s used in sushi), medium-grain rice (perfect for paella and risotto) and long-grain rice (popular in Chinese cooking and in the United States, but which needs to be cooked for longer).
If you’re on a diet or trying to lose weight, go for parboiled or wholegrain rice, which makes for healthy bowels.
