A quick and easy tip for a great soup

There’s nothing like a hot bowl of soup in winter. It’s a great staple recipe for a light supper or hot lunch and you can add practically anything. A simple trick is to let it cool once you’ve made it; that way, the fat used to fry the vegetables or released by other ingredients can rise to the surface. Next, wrap an ice cube in some kitchen paper and bring it gently to the surface to attract and absorb the fat. You can repeat as many times as necessary with fresh kitchen paper until most of the fat is gone. You’ll have a lighter, healthier soup that’s just as tasty.
