Gently fry vegetables before making soup

If you like making soup with pumpkin, broccoli, leeks and the like, here’s a tip you might not know. Instead of cooking the diced vegetables directly, first add some extra-virgin olive oil to the pan and gently fry the vegetables for a few minutes. Then add the water and cook the soup as usual.
