A tapenade is a French sauce made with black olives, anchovies and extra virgin olive oil, but you can use other ingredients too.
If you want to give it a twist, how about adding some capers or gherkins? Delicious!
The best way to make it is by hand, using a pestle and mortar, but you could use an electric hand blender if you prefer.
