Three ideas for healthy pasta dishes

There’s nothing healthier than a delicious pasta dish to recharge your batteries with the energy from carbohydrates served with tasty, healthy sauces. Here are three highly original recipes:

Vegan pasta

Wondering how to use up all those vegetables at the back of your fridge (courgettes, carrots, leeks, aubergines, pumpkin…)? Simply fry them lightly in a frying pan with a dash of extra-virgin olive oil and mix them in with your favourite pasta. If you want to add an extra boost of protein in under 10 minutes, throw in some cubed tofu too. Always remember to cook vegetables al dente: it’s best to cook them in batches starting with the ones that take the longest.

Pasta salad

Smoked salmon, feta cheese and olives, topped off with a handful of chopped almonds.  Et voilà, a sensational pasta salad as a delicious packed lunch for work!

Pesto with a twist

Although pesto is traditionally made with basil, why not try something different for a change? Try using spinach and cashew nuts for a fabulous dish that’s also a great way to get kids eating greens. Simply blend the ingredients together with a dash of extra-virgin olive oil, a squirt of lemon juice and a pinch of salt. Top off with some grated Parmesan and you’ll have a delicious meal in no time at all.
