So, you’ve opened the fridge and found a lettuce, some tomatoes, some goat’s cheese and maybe some radishes and a carrot or two. Well, you’re in luck! All you need now is a simple nuts vinaigrette to create a delicious, nutritional salad. If you fancy throwing in some cold pasta, go right ahead!
Simply mix about 70 ml of extra-virgin olive oil with a teaspoon of honey, a teaspoon of balsamic vinegar, a pinch of salt and pepper and your favourite chopped nuts. Drizzle over the salad and tuck in! This vinaigrette also works wonders with fish, rice salad, chargrilled vegetables and many other dishes besides.
