Mediterranean smells like garlic and onions. All together, but at due time. Keep this in mind when making a sauce or stir-fry. The onion has more water content than garlic, so it takes longer to cook it…

If you want these two ingredients to be cooked correctly, begin with the onion and wait until the water evaporates, when it acquires a tender texture and begins to get brown, before adding the garlic. If you go too fast, you may burn or bake the garlic, what will make it lose its properties and gain some defects.
