A protein-rich soup!

Lentil soup is a healthy source of protein, fibre, iron and minerals, but what really makes it rich in proteins (and this is particularly important for vegans) is the handful of croutons you add at the end, because this combination of pulses and cereals makes sure you get the eight vital amino acids you’d find in high-quality protein in meat, fish or eggs.

If you’re not a vegan, you can add a poached or fried egg and you’ll have a great balanced vegetarian dish.
