Cut the aubergines into thick slices, arrange in a colander, sprinkle some salt on top and leave for 30 minutes. This releases the juice that gives aubergines their bitter taste. Next, wash with cold water, dry well and they’ll be ready to cook. If you want to add a sweet touch, dunk them in water with salt and milk instead. Leave for a couple of hours, strain and dry with kitchen paper.
