Melted cheese is the perfect partner for a whole host of dishes, including nachos, chips, sandwiches and pasta dishes, to name but a few.
For perfect melted cheese without using a microwave, make sure you grate the cheese finely. Soft cheese melts at about 55º C, Cheddar and the like at about
65º C and dry cheeses like Parmesan at about 85º C.
And if your cheese sauce goes hard, you can always revive it with a dash of dry white wine or lemon juice.
