Soak dried fruit in brandy

Dried fruit needs to be softened before it can go into a recipe. You can rehydrate it in water, naturally, but you can also use spirits like brandy. This gives a lovely flavour to any sweet dish, including puddings, sponge cakes, tarts and mousses. The dried fruit needs to be soaked for about an hour.
