How to squeeze the most out of your citrus fruit

You can use citrus fruit in vinaigrettes, juices, sauces and marinades, and its fresh, tangy touch works wonders with most dishes. Another trick is to use a citrus spray to give a classy twist to fried food, pasties, rice dishes or grilled vegetables, for example. How about a lime and white-vermouth reduction sprayed onto some tasty croquettes?
