Why do steamed vegetables keep more of their goodness?

You’ll have heard it a thousand times, but why is it true? Well, foods lose more of their goodness the longer they are cooked and steaming creates a uniform heat at 100 ºC, which is lower than the temperature at which food begins to lose its goodness (110 ºC).
