Storing garlic in olive oil

If you’re fed up of throwing away garlic because it’s dried out or gone soft, try peeling the cloves and keeping them in good-quality olive oil in a glass jar. That way you won’t have to peel them every time you want to add them to a recipe, they’ll last longer and you’ll even get a garlic-flavoured olive oil you can use for dressings and dozens of recipes!
