Tinned food is a great ally to fall back on in the kitchen when you find yourself in a rush or with unexpected guests at the door, so make sure your cupboards are well stocked. But it’s worth making a bit more effort than just opening the lid: you can turn a humble tin of mussels into a mouthwatering appetizer simply by adding some finely chopped onion and pepper and a dash of vinaigrette.
