Keen cooks love pasta: it goes with almost anything and can be easily adapted to fit your every need. Vegetarians included. So here are some tips for creating delicious vegetarian dishes with penne, fusilli, farfalle, spaghetti and the like.
* Start by using whatever tasty vegetables are in season: peas, asparagus, courgettes, broad beans, aubergines, peppers, tomatoes… The trick is to cook them all separately to perfection and then mix them all together at the end.
* When it comes to sauces, pesto never fails. You can make it creamier by adding some ripe avocado. If you want to go vegan by leaving out the cheese, don’t forget to add two teaspoonfuls of nutritional yeast or brewer’s yeast, which have a similar flavour to cheese.
* Finally, put by some of the water used to boil the pasta and add it at the end for a final mouthwatering touch. Enjoy!
