Healthy cream of avocado soup
Ingredients
- 4 ripe avocados
- 1 litre vegetable stock
- Borges extra-virgin olive oil
- 1 lemon
- Borges toasted almonds
- Salt and pepper

Step 1
Scoop out the flesh from the avocado and mash to a puree -
Step 2
Warm up the vegetable stock and then take off the heat. Leave to cool before adding the lemon juice and avocado puree. Stir to make a smooth, creamy soup. Add salt and pepper to taste.

Serve with toasted almond bits and a swirl of extra-virgin olive oil.
