Separate the whites from the yolks. In a bowl, mix the yolks, the walnut drink and the sugar until a homogeneous mass is obtained.
Add the flour little by little, sifting it, and mix everything until you get a dough without lumps. Add the egg whites beaten to a stiff consistency and stir gently, using encircling movements.
Heat a pinch of Extra Light oil in the frying pan (just enough to grease it). Pour a little dough into the pan, so that a pancake about an inch thick is left. Cook it on one side and then carefully turn it over and cook it on the other side, until it is golden and completely done inside.
