Vegetables and egg breakfast tacos with tortillas

Ingredients

  • For the tortillas
  • * 250 g flour
  • * 20 ml Borges extra-virgin olive oil
  • * 100 ml warm water
  • * Salt
  • For the filling
  • * 1 onion
  • * 2 cloves of garlic
  • * 1 medium tomato
  • * 4 eggs (1 per person)
  • * 50 ml Borges Natura walnut drink
  • * A dash of Borges extra-virgin olive oil
  • * Salt and pepper to taste

Step by step

  1. Step 1

    To make the tortillas, mix all the ingredients together in a bowl. Pour some extra-virgin olive oil onto a flat surface and knead to make a soft, pliable dough. Divide the dough into as many pieces as you want tortillas and roll them out into thin circles.

    Pour a little extra-virgin olive oil into a small frying pan. When it is really hot, add a raw rolled-out tortilla and cook on both sides. Repeat as many times as necessary.

    For the filling, gently fry the onion, garlic and finely chopped tomato in a frying pan with extra-virgin olive oil.

    Beat the eggs, walnut drink, salt and pepper together in a bowl. Add to the frying pan and cook until the eggs are creamy but firm.

    Arrange the filling on the tortillas and enjoy your healthy and highly original breakfast to start the day firing on all cylinders.

    * If you have any cheese to hand, you can grate some on top and cook in the au gratin oven for a few minutes.
