Carrot pancakes recipe with banana and yogurt

Ingredients

  • To make the pancakes
  • 300 ml Borges Natura walnut drink
  • 200 g flour
  • 10 g baking powder
  • 3 medium eggs
  • 2 tbsp honey
  • 100 g carrots
  • 60 g Borges walnuts
  • A pinch of cinnamon
  • Butter for the frying pan
  • To make the filling (optional)
  • 2 Greek yogurts
  • 2 tbsp honey
  • 1 medium banana
  • Dark chocolate shavings

Step by step

  1. Step 1

    Put the flour, walnut drink, baking powder, eggs, honey, carrots, walnuts and cinnamon in the blender. You may need to shred the carrot and walnuts separately to mix well with the other ingredients. Blend all the ingredients together to produce a smooth, runny batter.

    Add some butter to the frying pan and, when it’s hot, ladle in enough batter to make a thin pancake. Cook over a low heat until it’s nice and crispy.

    For the filling, mix together the Greek yogurt and honey and spread over a pancake, together with some sliced banana and chocolate shavings. Add another pancake on top and repeat three times. Top off with a drizzling of honey, some sliced banana and some more chocolate.
