Dice the chicken and put it in a bowl with the soy sauce and a pinch of black pepper. Let it marinate for a few hours in the fridge, well covered so that it doesn’t pick up other flavors.
Chicken with cashew sauce
- 400 g chicken breast
- 60 ml soy sauce
- 1 medium onion
- 1 clove of garlic
- 100 g cashews
- 60 ml Borges extra-virgin olive oil
- Salt and pepper to taste
Step by step
In a pan with extra-virgin olive oil, sauté the onion and garlic over medium-low heat until golden.
Add the whole cashews and the chicken and cook over high heat, stirring constantly, until the chicken is golden brown. Add salt to taste if necessary (be careful, because the soy sauce is already quite salty, and the dish may not need extra salt).
