Finely chop the walnuts and mix with the breadcrumbs. Mix the mustard with the olive oil and honey.
Cut the chicken breasts into thinnish strips. Brush the chicken with this mixture and coat with the breadcrumbs and chopped walnuts.
Bake at 180 ºC for 10 minutes.
