Preheat the oven to 200 ºC while you make the mixture. Start by melting the chocolate and butter in the microwave.
Beat the almond drink, egg and sugar in a bowl. Add the extra-virgin olive oil and the melted chocolate you just made and beat in well.
Add the cocoa powder and flour (both sieved, if possible), together with the banana, and beat well. Chop up the almonds and add to the mixture.
Cover the base of an oven tray with baking paper and spoon on the mixture, leaving enough space between each dollop. You should have enough mixture for about 25 cookies.
Bake for about 25 minutes at 190º C. Take out of the oven and leave to cool at room temperature.
