Crispy Roasted Cauliflower

Ingredients
- 1 medium head of cauliflower
- 40 ml Borges extra virgin olive oil
- A pinch of nutmeg
- 70 g chopped walnuts
- 100 g grated cheese for melting (like mozzarella or cheddar)
- Salt and pepper to taste
- A dash of sweet or spicy paprika (optional)
Step by step

Step 1
Preheat the oven to 200 ºC.

Place the cauliflower, cut into florets, on a baking sheet. Drizzle with extra virgin olive oil, season with salt and pepper, add the nutmeg and mix well.

Bake for 20-25 minutes until the cauliflower is golden brown.

Add the walnuts and grated cheese and bake for 5-7 more minutes until the cheese is melted. Sprinkle with a little paprika for more flavor.
