Christmas cupcakes

Ingredients

  • 200 g flour
  • 5 g baking powder
  • 100 g sugar
  • 2 eggs
  • A pinch of salt
  • 125 ml light Borges extra light olive oil
  • 130 g whole milk
  • 1 tablespoon lemon juice

For the Frosting

  • 200 g butter
  • 200 ml whipped cream
  • 100 g powdered sugar
  • 250 g strawberries
  • 2 tablespoons cream cheese
  • Raspberries or blueberries to decorate

Step by step

  1. Step 1

    Make homemade buttermilk by mixing whole milk with a tablespoon of lemon juice and let it sit for 10 minutes at room temperature. 

  2. Step 2

    Beat the eggs well. Add the sugar and oil. 

  3. Step 3

    Mix the flour with the baking powder and salt to the homemade buttermilk and add the eggs. Beat until the ingredients are just combined. 

  4. Step 4

    Bake the batter in individual muffin cups at 155 ºC for half an hour. It is important to fill the cups only 2/3 full, as the batter will rise. 

  5. Step 5

    To make the frosting, beat the butter together with the cream cheese and sugar. Add the crushed strawberries. Fold in the whipped cream. Transfer the mixture into a pastry bag and frost the cupcakes once they are completely cooled. Decorate with berries to your liking.
