Ingredients

  • 1 bowl urad dal
  • 1 l curd
  • Sugar to taste
  • Black salt and normal salt
  • Dahi Bhalla masala
  • Borges Sunflower and Extra Virgin Olive Oil

Step by step

  1. Step 1

    Soak urad dal overnight, rinse, then grind with a little normal salt and water until smooth. Whip the paste in a bowl until it doubles in size and lightens in colour. Test its readiness by dropping a small amount in water; it should float.

  2. Step 2

    Heat the Borges Sunflower and Extra Virgin Olive Oil in a pan. Form the dal paste into small balls and fry until they turn golden. Immediately soak the fried balls in water until they swell and soften.

  3. Step 3

    In a bowl, mix curd with black salt, normal salt, a bit of sugar, and water until smooth. Squeeze water from the dal balls and add them to the curd.

  4. Step 4

    Garnish with Dahi Bhalla masala and drizzles of red and green chutney.
