We whisk the eggs and mix them with the sugar until they get an off-white colour. Gently, we add the olive oil. Then, outside the mixer, we mix the dry ingredients: the flour, the salt and the baking powder. With a mix tool we remove gently. Finally, we add the grated carrot.
If we use a big platter, we will cook it for twenty minutes at 180ºC. We let it cool and we make the frosting. We just need to whisk the ingredients until we get a thin pastry. With an icing bag, we decorate the carrot cake.
