Easy yogurt and walnut cake
Ingredients
- 2 low-sugar natural yogurts
- 4 large eggs
- 150 g Borges extra light olive oil
- 100 g walnuts
- 500 ml Borges Natura walnut drink
- 250 g flour
- 200 g xylitol
- 1 packet of baking powder

Preheat the oven to 180 ºC. Mix the xylitol with the egg yolks to make a smooth paste. Add the olive oil, walnut drink and stir well. Mix in the 2 yogurts.
Sieve the flour and baking powder and add to the mixture. Beat all the ingredients together, but don’t overdo it. Beat in the walnuts.
Beat the egg whites to stiff peaks and gently fold into the mixture.
Grease a pan with butter, pour in the mixture and bake the cake for about 45 minutes. Leave to cool for 15 minutes before taking out of the pan.
