Mediterranean-Style Green Bean Salad

Ingredients
- 400 g fresh green beans
- 150 g cherry tomatoes
- 1 small red onion
- 2 hard boiled eggs
- 50 g black olives
- 50 ml Borges extra virgin olive oil
- 15 ml red wine vinegar
- Salt and black pepper to taste
- A few fresh basil leaves (optional)

Step 1
Wash the green beans and trim the ends. Cook the beans in salted water for about 10 minutes (adjust the time depending on the size), until they are al dente. Drain and transfer them to a bowl of ice water to stop the cooking process and maintain their color.

Step 2
Slice the cherry tomatoes in half, the red onion into thin strips, and the hard-boiled eggs into quarters. Transfer everything to a salad bowl along with the olives.

Step 3
In a small bowl, mix the extra virgin olive oil with the vinegar, salt, and pepper. Pour over the salad and mix well. Serve the salad topped with a few fresh basil leaves.
