Wash the grey knights and remove the excess water by laying them on kitchen paper.
In a saucepan, lightly fry the leek. Add the grey knights and cook for 3 minutes. Add boiling water and cook for another 10 minutes. Liquidise the soup.
In a frying pan, lightly fry the peanuts with a dash of parsley. Serve the creamy soup in bowls with some peanuts scattered across.
