Clean the red mullets leaving the loins. Sauté and set aside.
Chop and lightly fry the bacon. Add the green beans cut into julienne strips and sauté over high heat together with the spring onions, the courgette and the aubergine.
In a bowl, mix some Balsamic Modena vinegar, salt and olive oil.
In the centre of the plate, place the sautéed green beans and put on top the red mullets’ loins filled with ratatouille. Season with the Modena vinaigrette.
