Lentils with vegetables

Ingredients

  • ½ onion
  • 1 red pepper
  • 1 carrot
  • 1 large peeled, seeded tomato
  • 400 g quick-cooking lentils
  • Borges Extra-virgin olive oil
  • Salt

Step by step

  1. Step 1

    Step 1: gently fry the vegetables, starting with the onion, in a pan with a little extra-virgin olive oil.

    Step 2: when they’re cooked, add a little water and blend.

    Step 3: put the lentils in a pan, add the blended vegetables and cover with water. If you like, you can add a ham bone for extra flavour. Cook for about 20 minutes.
