Ingredients

  • 300 g Borges long pasta (spaghetti, linguine, etc.)
  • 2 tablespoons butter
  • 3 tablespoons Borges extra virgin olive oil
  • 1 clove of garlic
  • ½ lemon
  • 40 g grated Parmesan cheese
  • A handful of fresh basil leaves
  • Salt and pepper

Step by step

  1. Step 1

    Cook the pasta in plenty of salted water until it is al dente. Set aside a cup of the cooking water before draining.

  2. Step 2

    Melt the butter with the extra virgin olive oil over medium heat in a large skillet. Add the finely chopped garlic and sauté for a few seconds, making sure it doesn’t burn.

  3. Step 3

    Add the lemon juice and zest and cook for a few more minutes.

  4. Step 4

    Add the pasta to the pan along with a splash of the reserved cooking water. Mix well, until the pasta is saucy and the texture is creamy.

  5. Step 5

    Add the grated Parmesan, season with salt and pepper to taste, and stir. Add a little more cooking water to adjust the texture if need be.

  6. Step 6

    Serve garnished with a few fresh basil leaves.
